Ingredients
- 1 cup fresh crab meat (preferably lump crab)
- 1 cup heavy cream
- 1/2 cup whole milk
- 4 large egg yolks
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon cayenne pepper
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives (plus extra for garnish)
- 1/4 cup granulated sugar (for caramelized topping)
Instructions
1.Prepare the Custard Base: Preheat your oven to 325°F (163°C). In a medium mixing bowl, whisk together the egg yolks, heavy cream, and whole milk until smooth. Add Parmesan cheese, salt, white pepper, cayenne pepper, Dijon mustard, and lemon juice to the mixture. Whisk until well combined.
2.Incorporate the Crab: Gently fold the fresh crab meat and chopped chives into the custard mixture. Be careful not to break up the crab meat too much to maintain its texture.
3.Assemble and Bake: Divide the custard mixture evenly among 4 small ramekins. Place the ramekins in a baking dish. Pour hot water into the baking dish, ensuring it reaches about halfway up the sides of the ramekins. This water bath will help the custard cook evenly. Carefully transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the custards are set but still slightly jiggly in the center. Remove the ramekins from the water bath and let them cool to room temperature. Then, refrigerate for at least 2 hours to allow the custard to firm up.
4.Caramelize the Sugar: Just before serving, sprinkle an even layer of granulated sugar over each custard. Use a kitchen torch to caramelize the sugar until it forms a golden, crispy crust. If you don’t have a kitchen torch, you can use your oven’s broiler. Place the ramekins under the broiler for a few minutes, watching closely to prevent burning.
5.Serve and Enjoy: Garnish with additional chopped chives for a pop of color. Serve immediately and enjoy the contrast of creamy custard and crunchy caramelized topping.
Notes
- For the best flavor, use the freshest crab meat you can find. Canned or imitation crab meat can be used in a pinch but may alter the taste.
- To make this dish ahead of time, prepare the custard and refrigerate. Caramelize the sugar just before serving for optimal texture.
- Pair with a light green salad or crusty bread to complete your meal.
