Instructions

1.Prepare the Tofu: Press the Tofu: Use a tofu press or wrap the tofu in paper towels and place a heavy object on top for 10-15 minutes to remove excess moisture. Cut the Tofu: Slice the tofu into bite sized cubes. Cook the Tofu: Heat a non stick pan over medium heat and lightly oil it. Sear the tofu cubes until golden and crispy on all sides (about 5 minutes). Remove and set aside.

2.Make the Dressing: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, ginger, garlic, and lime juice until well combined.

3.Assemble the Salad: In a large salad bowl, combine the mixed greens, shredded carrots, sliced cucumbers, red bell peppers, and red onions. Add the crispy tofu on top. Drizzle the dressing evenly over the salad.

4.Garnish and Serve: Sprinkle toasted sesame seeds and chopped cilantro over the salad for added flavor and presentation. Serve immediately and enjoy.

          Notes

          • Pressing Tofu: Removing excess water helps tofu crisp up better when cooked.
          • Customizations: Add avocado, edamame, or roasted nuts for extra texture and nutrients.
          • Storage: Keep the salad and dressing separate if meal prepping. Assemble before eating to keep ingredients fresh.
          • Gluten Free Option: Use tamari or coconut aminos instead of soy sauce.
          • Spice It Up: Add a dash of sriracha or red pepper flakes to the dressing for heat.
